A Note From the Queen

Dear Subscriber,

My sister, Eve and I, are attending a series of classes, over the next four months, about intricate information regarding nutrition. I just love learning the real truth about how nutrients and systems work together giving us the whole truth about how it all works. Such as my feature article this month, this information was given in our class that I thought you would find very helpful, especially if you have children or know of others with children, send them this article.

I want you to meet our new nutritional counselor, DJ, she has her story to share with you in "Tidbits From The Staff." She is a wonderful addition to our nutritional team. She is also teaching a class this month about getting more greens into your life.

From DJ our new Nutritional Therapist
At age 16, I was hospitalized and misdiagnosed with cancer. After running some test, the doctor's discovered that it wasn't cancer but rheumatory arthritis. Still more tests needed to take place to confirm their findings, and I was finally diagnosed with Mono. I was told to go home, get plenty of rest, 10 to 12 hours, and eat nutritious meals. Well, to tell a teenager who never wanted to miss any opportunity for fun, to sleep and eat good just wasn't my idea of fun.

At age 19 I was admitted to the hospital and was diagnosed with Mono once again. I decided I didn't like hospitals and the tests that were run. I thought maybe there was something to this sleeping and eating healthy thing. Voila, it worked! I stayed healthy until the pregnancy of my first child. My spark for nutrition began. This is where it really gets good.

I was 29 when I conceived my first child and I was working at a computer company in a very high demanding job. Morning sickness set in at the sixth week mark and never left until 10 minutes after the birth. During this time I couldn't eat anything. While still plugging away at my job, sleep was the only freedom I knew. As a new mom, I took care of my precious child and no one else. We had the luxury of my husband staying home with our daughter.

I went back to work and ran from meeting to meeting. All day long I would grab whatever food I could find in the vending machines and/or cafeteria. I would then stuff it down my throat and move on to the next tasks. Thank God my husband loved to cook because dinner was the only nutritious meal I ate and he made sure of that. So let's fast forward a little. We moved from the Bay Area to El Dorado County. At age 31, I decided I was ready to have another child. I'm thankful nature has a way of allowing me to forget my previous pregnancy and birth (I guess we call denial).

Again, I was sick through the whole pregnancy and now had 2 precious children to attend to. I was still running to all the meetings and eating all those refine, processed, convenient foods. At 35 I was finally laid off, a blessing in disguise. By this time I was a mess, overweight, depressed, moody, exhausted, etc. I new something had to be done. I remembered how great I had felt at 19 when I ate nutritious foods and received the sleep my body required. I took out my recipe books and started cooking. I did start to feel better but for some reason my body was not functioning at its' full capacity. I was dumb founded. I new there was a missing link and I was going to find it. I enrolled in school to become a Holistic Clinical
Nutritionist so I could figure out what was missing.

After continuous studying, I was able to unravel the missing link. You would have thought I had won the lottery. Anyway, while going to school, I discovered raw foods, and how to prepare foods correctly. I took classes, read every book I could get my hands on and tried this method of eating for a while to see what it was all about. It provided me a creative way to get lots of veggies into my diet among other things. I'm currently studying with a well known herbalist and will continue furthering my education because frankly, I just can't get enough.

Should We Fear Fever?
Fever is a built-in mechanism of repair. The muscles around bones become warm in order to leach ionized calcium from the bones and free the calcium where it is needed to activate white blood cells.

No one ever "burned up" with fever; no one ever will. Heat a pan of water to 106 degrees F, insert your finger and see how hot it is. Do you feel anything except lukewarm water? Yet, we have been taught to fear fever.

Parents frequently panic over the thought of seizures-called febrile convulsions-that sometimes occur with sudden high fever in children. Pediatrics (66:1009-1012, December 1981) establishes the truth by stating that febrile convulsions in children do not injure the central nervous system (brain and spinal cord). "Febrile convulsions," which mean muscle twitches from fever, are really "hypocalcemic tetany," muscle twitches resulting from low blood calcium. These muscle twitches do not cause brain damage and do not lead to epilepsy.

The biochemistry of inflammation and repair requires increased ionized calcium [because] the ability of phagocytes (the white blood cells that engulf foreign or dead particles) to carry out their function is dependent on the available calcium in these cells. Ionized calcium means free, uncombined calcium in the ionic form. The ionic form means the element carries electrical charges.

Although fever is a purposeful process to release stored calcium from the bone reserves, it is better to supply calcium in the diet rather than withdrawing it from the bones. The

pasteurization of milk alters the available free calcium. In turn, pasteurized milk is not a good source of free calcium.

Calcium lactate is regarded as a good source of ionizable calcium to utilize in overcoming and/or preventing calcium deficits and thus fever and febrile seizures. Two to four tablets can be dissolved in one or two ounces of non-fluoridated, non-chlorinated water or the tablets can be swallowed with water or juice, preferably on an empty stomach.

Every home with children should have a supply of calcium lactate on hand. The easiest to use forms are Calcium Lactate tablets or Congaplex capsules.

For infants and small children:
o 2 Calcium Lactate tablets can easily be crushed and mixed in a few ounces of water or juice.

Recipes For Your Health

Olive oil salad dressing are one of the best oils to use for dressings. Polyunsaturated fats in salad dressing are not as good because it gives us to much omega 6, which can cause inflammation and high blood pressure. We only need 10% of polyunsaturated fats in our diet, and 60% from monounsaturated fats, which is Olive oil.

DJ's
Salad Dressing
Makes: 1 cup

1/4 cup cold-pressed olive oil
2 cloves garlic, chopped
4 medium stalks celery, cut into thirds
1/2 cup water
1/4 cup freshly squeezed lemon juice
1/4 cup Nama Shoyu soy sauce
2 tbsp of sweet white miso
5 organic unsulfured dates
Freshly ground pepper to taste

Blend all of the ingredients in a blender and serve
over salad of your choice. Also, is a good dip for
veggies. Keeps for about 10 days.
