A Note From the Queen

Dear Subscriber,

The kids are out of school for the summer, our son Cory graduated high school, it has been over 7 years since my last one graduated, finally only one more left to graduate.

Isn't my life supposed to be getting less busy the older I get? If more kids are out of the house my life should be less busy, right! My business, Fountain of Health is almost 18 years old and almost ready to graduate into more expansive space. Pretty soon she will be an adult and having children. Then I will be less busy, Hmmm..... Grandchildren? Yep, that will keep me busy. I guess I better enjoy my life right where I'm at.

Eve and I will be finished with our 8 month micro-biology class the end of June. We have learned a lot about stressors that lower the immune system such as viruses, bacteria, fungus, parasites, heavy metals and chemicals. We have learned how to find out what organs are being stressed and get them out of the body. Clients are getting better, we have had excellent results.

In the feature article written Mary G. Enig, PhD she talks about the real truths about fats and cholesterol. I don't want you to be afraid of fat, historically we ate fat. 100 years ago there were no documented cases of heart disease. The problem is we started processing polyunsaturated fats like corn, soy, canola, safflower then we hydrogenated these fats that's when we started having problems. I just have to tell you, we have the most magnanimous health program there is on the planet, I have been working with clients who work our program and have 100% success! Every client who has worked our program and stuck with it has been helped. They have all made incredible changes, feeling better and having more energy. I find people may come in and may have there own agenda about what they think they need to do to clean there colon and get healthy, because of what they have heard on an infomercial, read in a book or from a friend. I was unable to enjoy going out with my husband for meals, which I love to do. I would be so bloated from constipation that I could not wear anything that rested on my stomach. After a meal I would always have uncontrollable diarrhea. Since I have been coming to Fountain of Health my intestinal problems have all disappeared. Fat Facts: Trans Fats and Saturated Fats Are Not the Same

The dangers of trans fatty acids in the food supply have been the subject of several recent articles in the major newspapers. Unfortunately, these articles are filled with misinformation, particularly regarding the role of saturated fats in the human diet.

For example, Rekha Balu, writing for the Wall Street Journal states that trans fats are like saturated fats "which raise bad cholesterol, causing a buildup of fatty deposits in the arteries."(1) Lynn Roblin, writing for the Toronto Star, advises consumers to avoid trans fats by consuming more vegetable oils, such as olive oil and canola oil, in preference to butter and coconut oil.(2) Harvard nutritionist Frank Hu, featured in an article for the Washington Post, says butter is better than stick margarine, but tub or liquid margarine made from commercial vegetable oils is "a more healthful choice than butter."(3)

Trans fatty acids have similar properties to saturated fatty acids when used in baked goods, but the assertion that trans fatty acids are like saturated fatty acid is not correct in biological systems. A listing of the biological effects of saturated fatty acids in the diet versus the biological effects of trans fatty acids in the diet is in actuality a listing of the good (saturated) versus the not-so-good (trans).

Note that:

(1) saturated fatty acids raise HDL, the so-called good cholesterol, whereas the trans fatty acids lower HDL cholesterol;

(2) saturated fatty acids lower the blood levels of the atherogenic lipoprotein (a), whereas trans fatty acids raise the blood levels of Lp(a);

(3) saturated fatty acids conserve the good omega-3 fatty acids whereas trans fatty acids cause the tissues to lose the good omega-3 fatty acids;

(4) saturated fatty acids do not inhibit insulin binding whereas trans fatty acids do inhibit insulin binding;

(5) saturated fatty acids are the normal fatty acids made by the body and they do not interfere with enzyme functions such as the delta-6-desaturase, whereas trans fatty acids are not made by the body and they interfere with many enzyme functions such as delta-6-desaturase;

(6) some saturated fatty acids are used by the body to fight viruses, bacteria and protozoa and they support the immune system whereas trans fatty acids interfere with the function of the immune system;

(7) stearic acid, a naturally saturated fatty acid, is the preferred food for the heart whereas trans fatty acids replace these saturated fatty acids in the cell membrane, thus depriving the heart of its optimum energy source;

(8) saturated fatty acids are needed for proper modeling of calcium in the bones whereas trans fatty acids cause softening of the bones; and

(9) saturated fatty acids from animal sources are carriers for vital fat-soluble vitamins whereas factory-produced trans fatty acids are devoid of these important nutrients.

We should take every precaution to exclude trans fatty acids from the diet. But when we exclude saturated fats from our diets as well, the calories are replaced by other calories in the form of polyunsaturated fatty acids from commercial vegetable oils, monounsaturated fatty acids from olive oil or canola oil, protein or carbohydrates. Excess polyunsaturates have been shown to contribute to heart disease, cancer, weight gain and many other health problems.

Excess oleic acid can contribute to prostaglandin imbalance and weight gain, while canola oil causes vitamin E deficiency and other problems. Excess protein leads to deficiencies in the fat soluble vitamins, can be a strain on the kidneys and will be turned into fats if protein intake exceeds requirements. Excess carbohydrates are also turned into fats! So any foods in excess will be turned into fats, but none except the animal fats carries the fat-soluble nutrients so important for overall good health.

The food manufacturers will not willingly return to using naturally saturated fats such as coconut oil, palm oil, butter, tallow and lard because they are more expensive. Only a concerted demand by educated consumers will bring healthy traditional fats back into the American food supply.

Cholesterol - Your Body's Best Friend

Cholesterol is the body's repair substance. Scar tissue contains high levels of cholesterol. When your arteries develop irritations or tears, cholesterol is there to do its job of patching up the damage.

Along with saturated fats, cholesterol in the cell membrane gives our cells necessary stiffness and stability. When the diet contains an excess of polyunsaturated fatty acids, these replace saturated fatty acids in the cell membrane so that the cell walls actually become flabby. When this happens, cholesterol from the blood is "driven" into the tissues to give them structural integrity. This is why serum cholesterol levels may go down temporarily when we replace saturated fats with polyunsaturated oils in the diet, even though the body's overall cholesterol levels actually go up.

Cholesterol acts as a precursor to vital corticosteroids, hormones that help us deal with stress and protect the body against heart disease and cancer; and to the sex hormones like androgen, testosterone, estrogen and progesterone. Cholesterol is also a precursor to vitamin D and to the bile salts. Bile is vital for digestion and assimilation of fats in the diet.

Recent research shows that cholesterol acts as an antioxidant. This is the likely explanation for the fact that cholesterol levels go up with age. As an antioxidant, cholesterol protects us against free radical damage that leads to heart disease and cancer.

Cholesterol is needed for proper function of serotonin receptors in the brain. Serotonin is the body's natural "feel-good" chemical. Low cholesterol levels have been linked to aggressive and violent behavior, depression and suicide.

Mother's milk is especially rich in cholesterol and contains a special enzyme that helps the baby utilize this nutrient. Babies and children need cholesterol-rich foods throughout their growing years to ensure proper development of the brain and nervous system.

Dietary cholesterol plays an important role in maintaining the health of the intestinal wall. This is why low-cholesterol vegetarian diets can lead to leaky gut syndrome and other intestinal disorders.

Men who have cholesterol levels over 350 mg/dl are at slightly greater risk for heart disease. For women, there is no greater risk for heart disease, even at levels as high as 1000 mg/dl. In fact, mortality is higher for women with low cholesterol than for women with high cholesterol.

Cholesterol readings are highly inaccurate. They vary with the time of day, time of the patient's last meal, levels of stress and the type of test used. Tests for HDL and LDL are especially subject to inaccuracies.

Recipes For Your Health

It's time for vegetables, here are some yummy recipes.

Blanched Greens with Miso-Walnut Dressing

Preparation time: 5 minutes
Cooking time: 15 minutes
Yields: 4 servings

1 small bunch greens: collards, kale, mustard....
3 tablespoons walnuts, dry roasted and chopped fine
2 tablespoons barley miso
1-2 teaspoons lemon juice
1/2-3/4 cup water

Blanch or steam the bunch of kale, leaving it whole. Allow it to cool and drain before slicing to a size of your choice.

1. To make dressing, place the walnuts in a food processor and grind them finely, but not to a paste.
2. Add the miso and grind more.
3. Add the lemon juice and mix; add water to taste and mix again.
4. Serve the dressing over the boiled kale.


Garlic Steamed String Beans

1 pound string beans
2 cloves garlic
2 tablespoons tamari soy sauce
4 tablespoons tahini
1/2 of a lemon's juice

Directions:

1. Wash and cut beans by chopping both ends off and cutting them in half.
2. Place them in a steaming basket.
3. Add about 2 inches of water to your pot.
4. Bring to boil, cover and steam for 10 minutes.
5. Meanwhile mix tahini, tamari, and minced garlic cloves into mixture.
6. When beans are done, put them in serving bowl and pour mixture over it.
7. Squeeze lemon on top and you are done.

Light and Simple Salad
Prep Time: 5 minutes
Yields: 4-6 servings

Ingredients:
4-6 large handfuls of salad mix
1/4 cup roasted sunflower or pumpkin seeds
6 red radishes, thinly sliced

Directions:
1. Toss all ingredients.
2. Serve with extra virgin olive oil, lemon juice and sea salt.


Variations:
Add Tuna
Add ½ cup kidney beans
Add grated carrot and beets, thinly sliced cucumber or celery.
