Hi! My name is Diane Casas and I have joined the team at Fountain of Health. I originally got my degree and started my career in the Criminal Justice field but realized that I wanted to work with people in a more caring and nurturing environment. This led me to the fields of Aesthetics and Massage Therapy.

As an esthetician, my focus is to help you achieve the results that you want for your skin. My own struggles lead me to pursue the field of aesthetics to learn about effective skin care. I now have the knowledge to help others achieve the results they want. I also wanted to work with my clients in a more holistic way and massage therapy proved to be a natural extension to my aesthetic work. Having the knowledge of both fields allows me to treat my client's skin and bodywork as a whole.

Fountain of Health is not just a place for me to work at but it also feels like I found my home. I love it here and I'm learning so much about my health, I have never eaten so well. I thought I was eating healthy before, I was wrong. I have learned what to eat, quality of foods, the rhythm of my body and how to listen to my gut. I have never felt better. I am looking forward to getting to know you and provide you knowledge, tools and great service so you can achieve your skin care and bodywork goals.

WHAT'S GOING ON
In Your Body During Stress?

All of you have heard how stress can affect our thoughts, emotions, health, and overall well being. If stress continues, it can kill us. When we are stressed our bodies go into survival mode; called "fight or flight" our adrenals produce adrenalin which can make us feel like we have energy. We could move that log off our loved one or run away from that bear chasing us. The body is not used to being in a state of stress very often. Just think how often you encounter a situation in which your life is threatened and you need to be in survival mode. It is not natural to be in survival mode all the time.

During Stress we have adrenalin burst, afterwards we feel exhausted, it takes at least twenty minutes for the muscles to relax after a small stress episode. When feeling fatigued after adrenalin burst, we might want to take something that will give us energy again.
We ingest caffeine, sugar, nicotine or a drug to put ourselves, yet again, in another adrenaline outburst. This keeps your body riding an adrenalin roller coaster. If you keep being stressed repeatedly, then the body never gets a chance to recover.

Let me explain, after the adrenalin burst, the stress causes the immune system to decline, because it is using adrenaline to keep the body in a hyperactive mode. This is like burning rocket fuel in your car rather than gasoline. You're burning the candle of your life at both ends. And like I said, this is not a natural state for the body to be in. If stress is continued then your body's immune system becomes weak and you will end up getting sick. Your body needs the chance to recover after stress.

There are three stages of stress:

The first stage is shock.

The second stage is "general adaptation syndrome," which is where the body appears to return to normal, but when more stress is added, it has more of a difficult time dealing with it.

Exhaustion is the third stage. At this point, the stress overwhelms the person, and death can occur.

So much of our stress today is psychological, such as; watching a scary movie, paying the stack of bills, being involved in a lawsuit, and traveling on a congested freeway.

Physical changes that happen in the body due to stress are:

1. Blood is shunted away from digestive organs and outward to the muscles to insure that we are prepared for action, causing a decrease in digestive activity and movement in the intestines.
This means that your food is just sitting in your stomach and colon, not being digested. This can cause heartburn, acid reflux, digestive and eliminatory problems.

2. The heart rate and blood pressure increase the blood flow to the brain and to the limbs.
This can cause headaches, muscle cramping and swelling.

3. Sugar is released into the blood stream to provide energy for the brain and muscles. Muscles tense for action.
This is why you crave sugar, (simple carbohydrates) caffeine or some stimulant after a stressful situation.

4. Blood clotting occurs more rapidly, so the body can prevent blood loss if there are internal or external injuries.
This can cause a heart attack, stroke, and high blood pressure, to name a few.

5. The skin becomes less sensitive, as blood withdraws from the skin, so injures will not be felt so acutely. The pupils dilate for increased visual perception.
Maybe this is why the skin looks pale and sallow and our eyes are so sensitive to the sun.

The Health Queen Recommends

Stress is something we react to. We can re-train ourselves not to react. Talk to yourself logically. Ask yourself, "Is there anything I can do about this situation?"
For example: If you are stuck in traffic and you are late for an appointment. The answerer is no, there is nothing you can do about being stuck in traffic. Then ask yourself, "What can you do now?" You might remember that you needed to call someone, or you have that book on tape you want to listen to while you are waiting in the car.

Meditation: Meditation, Yoga, Tai Chi, or simple deep breathing exercises can help you bring stress under control. Much of the damage that stress does to your health is not due to any external factors, but rather how your mind interprets those factors. Meditation and other techniques help to reduce the harm of stress by quieting the mind.

Sports and hobbies: Meditation and Yoga may be a little "New Age" for some people. Hobbies are a good solution for these people. Most hobbies are relaxing; your mind has to focus on a simple task rather than on sources of stress.

Exercise: Moderate aerobic exercise is good. This is exercise that uses large muscles repetitively and is mild enough that you can carry on a normal conversation during the activity. Anaerobic (exercising so hard that you can't carry on a normal conversation) exercise can be stressful and should be limited while the adrenal glands are recovering.

Diet:There are many types of stress. Chemical, physical, thermal, and mental stresses can all cause harm to the body. Stress is cumulative. A stressful job situation is compounded by a poor diet. Eat small, frequent meals; avoid chemical additives and sugar, refined carbohydrates and hydrogenated oil. Eat plenty of vegetables and make sure that you get enough protein. At mealtime relax and focus on enjoying your food; don't eat on the run.

Recipes For Your Health

Fast and Easy Recipes

SLOPPY JOES
Serves: 4
* 1 tablespoon light olive oil
* 1 medium onion, finely chopped
* 10- to 12-ounce package turkey, beef or tempeh, (protein source)
* 1/4 cup finely chopped green bell pepper
* 1 cup thick tomato sauce
* 1 tablespoon soy sauce
* 1 tablespoon honey or maple syrup
* 1/2 teaspoon each: chili powder, cumin, garlic powder
* Whole wheat rolls or pita bread
* Shredded lettuce
Heat the oil in a skillet and sauté the onion until it is golden. Add the crumbled (protein source) and green pepper and saute over moderate heat until the (protein source) is lightly browned.

Add the remaining ingredients (except the last 2), stir well, and cook over low heat for 10 minutes. Serve hot on whole wheat rolls or in pita bread with shredded lettuce.

BUCKWHEAT NOODLES WITH SAUTEED SQUASH
Serves: 4
* 1/2 pound buckwheat noodles
* 1 1/2 tablespoons olive oil
* 2 cloves garlic, minced
* 1/4 cup dry white wine or vegetable stock
* 1 medium zucchini, thinly sliced
* 1 medium yellow summer squash, thinly sliced
* 6 to 8 ounces thawed frozen chopped spinach
* 1/4 cup grated organic Parmesan cheese
* Salt and freshly ground pepper to taste
Bring water to a boil in a large pot. Add the noodles and cook at a steady simmer until al dente, about 5 to 7 minutes. Drain at once and transfer to a covered serving dish.

In the meantime, heat the oil in a skillet. Saute the garlic for a minute or two, until golden, and then add the wine and squash. Cook until the squash are tender-crisp. Add the spinach, cover, and cook just until everything is well heated through.

Transfer to the serving bowl and toss with the noodles. Add the Parmesan cheese, and season to taste with salt and pepper. Toss again. Serve at once.

QUINOA PILAF WITH PEAS AND ALMONDS
Serves: 4 to 6
* 3 cups vegetable stock, or water with 1 vegetable bouillon cube
* 1 1/2 cups raw quinoa
* 3 to 4 scallions, white and green parts, thinly sliced
* 2 teaspoons salt-free all-purpose seasoning mix
* 1 1/2 cups frozen green peas, thawed
* 2 tablespoons organic butter
* Salt to taste
* 1/3 cup slivered or sliced almonds
Bring the water or stock to a simmer in a large, heavy saucepan. Rinse the quinoa well in a fine sieve. Stir the quinoa into the boiling water along with the scallions and seasoning blend. Cover and cook at a gentle but steady simmer until all the water has been absorbed, about 15 minutes.

Stir in the peas and butter, then season to taste with salt.

Transfer the pilaf to a serving bowl and scatter the almonds over the top. If time allows, you might like to lightly toast the almonds, either in a dry skillet over medium heat or in a 250-degree toaster oven. Watch carefully, they toast quickly!
